Lets talk brekkie!!

They do say that breakfast is the most important meal of the day and I find that to be so true! A good filling breakfast will help you ward off that mid morning slump! Many people say they don’t have time to cook a good breakfast so I thought I would share with you my quick and easy go to Keto breakfasts. So filling, delicious and really does keep me going all day!

Just before you get started it is so important to weigh out all of your portions so you know exactly what you are having so you can log accurately. Always go from the nutritional label when counting your calories and macros. I use the Carb manager app but sometimes the database is not always accurate so always go by the label. It might take a couple of extra minutes but it will have a massive impact on your weight loss.

  1. Eggs Eggs Eggs!

I am sure you have heard this a million times before but eggs really are a keto dieters dream! Carb free, filling, so versatile and delicious! You can fry them, scramble them, boil them, poach them, what ever tickles your pickle! Personally I like to scramble them with a little garlic and pepper and stick them on top of half an avocado or some homemade Keto mug bread for a treat. However you cook them you can have a tasty breakfast whipped up in just minutes.

2. Fry up!

Or grill up which ever you prefer. Obviously fry with a healthy oil such as pure olive oil, coconut oil etc. A couple of fried eggs, couple of slices of bacon, mushrooms and maybe a few cherry or plum cherry tomatoes. Watch your portions with the tomatoes as they are higher in carbs. Mushrooms are great! Tasty, low in carb and very filling. Depending on your ingredients a good old fry up with set you back 1-4g of net carbs.

3. Omelettes!

Omelettes are a fantastic choice for breakfast. Low carb quick and easy! You can add it a bit of cheese as a treat. I like to add spinach, tomatoes, mushrooms and a little grated Red Leicester cheese now and again. Top with a bit of cracked black pepper delicious! I love a bit of cheese but it can rack up your calories. Personally I have found if I have too much cheese it does stall my weight loss but everyone is different.

4. Keto Crepes!

I love Keto Crepes! So easy and quick to make and only require 2 ingredients. 2oz of full fat cream cheese and 2 eggs! That is it! You soften the cream cheese in the microwave for 20 seconds then whisk the eggs one at a time to make your batter. Warm up your skillet/frying pan add a little olive oil pour in your mixture and bam! In a few minutes you have delicious crepes! I also like to add a little cinnamon to the top or some sugar free maple syrup. Such a nice treat and only 2g of net carbs depending on your topping of-course.

5. Almond Flour Pancakes!

Almond flour pancakes are amazing! To me they taste just like the real thing. They are slightly higher in carb then the crepes but roughly around 4g of net carb per pancake. They also require a few more ingredients but if you are already a keto dieter you will probably have these ingredients in your cupboard already.

The recipe calls for sugar free maple syrup, I personally use Maple flavour syrup from the #notguilty range from The Skinny Food company. Watch out for the sugar free syrups as they can have sneaky hidden extras. Always check the type of sweeteners they use as some of them are actually higher on the GI index then regular sugar!

I’m back!!…….. again……

Firstly I would like to apologise for my hiatus again. Also I hope that you are all doing well in this very strange and uncertain time in lock down. Due to my health issues I am self isolating. I started a couple of weeks prior to the official lock down. I have been very up and down with my weight. I also fell off the wagon as far as Keto is concerned as it has been very difficult to buy the ingredients I need so I did have to eat more carbs then I usually do wish has resulted in gaining a few pounds.

In difficult times needs must don’t they? Anyway I have since been able to sort out that issue and I am now back eating a Keto diet again. I have already lost 6lb so far so good! I know I have said before I want to blog consistently but at the moment I am finding it quite difficult to keep things up due to my condition I am constantly tired and in pain so it can be quite hard to focus or put my thoughts into any kind of order!

Still I would like to try and keep things up and try and stay on track so I thought I would share with you all some of my recipes and go to meals that have really helped me get my weight back under control. Obviously my mobility is still very limited and being under lock down does not help this of course but the one thing I can control is what I eat.

Christmas Overindulgence!

Well I did end up indulging in some carbs over Christmas and New Year. I ended up putting on a few pounds but I am now back on Keto again and I have shifted the weight I put on over Christmas fortunately. I am excited to see how much I can lose this year. I managed to lose 2st 8lbs by the end of last year.

I am excited to see how much I can lose this year as long as I stay on track of course. I will keep you all updated with my progress. I hope that you all had a wonderful Christmas and New Year and I wish you all the best for the year!

I can do it!/ Merry Christmas!

Well it has not been too bad a week for me. I have got myself back on track and I have decided to try not to beat myself up too much. I have another 2 stone I would like to lose over the coming new year but I am not putting time deadlines on myself. I have had one or two naughty treats with it being the festive season so I am indulging I am just not going to be over indulging too much!

I am still going to log all of my food over the Christmas week to make sure I don’t go too overboard but I have decided not to weigh myself until the New Year. I know if I do this I will be obsessing and I don’t want to ruin my Christmas worrying about it all.

Always remember tomorrow is a new day fresh from mistakes.

I wanted to say a quick thanks to all of my lovely readers it is because of you I am keeping going and am so far being successful on my journey. I still have a long way to go but I am hopeful and optimistic for the future.

Getting back on track!

I must admit I have been fighting a losing battle with myself this week. I have had some good days and some bad days. I don’t know what it is about the cold and damp weather that makes you want to wrap up and eat junk!

I seem to wake up with the best intentions but the stresses of life just seem to get in the way and I make some poor decisions. I put on a couple of pounds this week but I am going to get back on track! I want to look fabulous in my new outfit for my special secret Santa dinner! I am going to try not to get so hung up on the scales. I did measure myself and I have lost a few more inches which is a much better indication.

I have started using a new food tracker called Cronometer. It seems a lot more accurate and better to use for the Keto diet. I am going to throw in some intermittant fasting this week too. I have a few new recipies from the Lazy Keto app I want to try. I will get there!

Well that’s a mixed bag!

Well it has been a mixed bag again. Some good food choices and some bad. My health has not been the best, I have had a lot of pain so I was not prepared as much food wise as I would normally. We ended up having a few naughty things but at the end of the day we are only human and sometimes we make mistakes so I am not going to beat myself up too badly. Every day is a fresh opportunity to start again.

I installed a great app called ‘Lazy Keto’. It has lots of great Keto recipes, some are a little rich for my taste so I just adapt them to my liking. I have dropped another couple of pounds so I am happy about that. If you are interested in the app you can download it from Google Play or the App store. I would highly recommend!

Some of the things I have eaten this week!

  • Keto cream of mushroom soup and green bean fries (Delish!)
  • Courgette Lasagne ( Also delish!)
  • Homemade Keto chicken curry poured over steamed cauliflower. ( I have tried caulirice but it is just disgusting so I just prefer fresh cauliflower)
  • Steak and Keto cauliflower cheese.
  • Courgette chips.

I am still mainly eating eggs and cooked breakfasts but still trying to find some good Keto breakfast recipes that aren’t too complicated or time consuming. I am getting a little sick of eggs if I am honest! I have had them in many many different ways. If you have any ideas or recipes I would love to hear them so feel free to comment below!

Getting back on track – Progress Pics!

Last week was a bit of a bad week for me food wise. I have been feeling pretty worn out from a very full on week. Still suffering a bit now but that is life! I had a great time seeing my very good friend and her gorgeous little daughter. The train ride there and back was a bit of a nightmare, ended up getting back quite late so did not feel up to cooking. In hindsight I should have prepared something for when we got back but hey ho.

Friday night I went to see a band that I have loved since I was 16 years old! It was held at my local bingo so was able to sit down. My hubby got me a VIP ticket so I was able to be right up front. They were amazing! We did have another late night so ended up not making the best food choices! I made hubby take the batteries out of my scales so I won’t weigh myself and get discouraged.

Today is a new day and a new week to get back on track. As promised! Progress pics!

I’m back!

Well what can I say. It has been a very tough few months for me health wise so I apologise for not keeping up with things. I am a little annoyed at myself as I did want to blog every day but my health has not really allowed it. I saw a very good friend of mine yesterday and she has given me such a boost and some great advice so I have decided that I will keep blogging but once a week as my health allows.

A little update! I have managed to stay on track with my weight loss. I am now only doing Keto. I have lost 2st 9lb since January. I will post some more progress pictures soon. I hope that you are all well and I hope you will continue to follow my journey. I hope you are all doing well in your journeys! Thank you for reading if indeed you still are!

Tuesday 24/9/19

Dear Diary,

I felt like it was quite a productive day today. I managed to do the cleaning I needed to do but I am paying in pain for it now. Still needs must. I did enjoy my dinner today, I really enjoy fish although I don’t like the smell it leaves! The hubby and have been craving something sweet but trying to cut down on sugar. I have found a few Keto cake recipes so I am going to have a go at making them and see if we can curb those cravings.
